Luohe Bean Cake, Huainan

It is also called Luojian Bean Sheet, Coin Cake and Red Bean Cake (the main production area is Luohe and Shangyao or whereabouts). Cooking method: first add water to bean curd powder and flour to make a plasm of water and powder. And then put them onto the pan and bake into a cake in the size and shape of a coin. It can be stir-fried, fried, braised and wall-hung, etc. There are softly stir-fried bean cakes, fried bean cakes, bean cakes with strange taste and wall-hung bean cake, etc, which are all famous local specialties. Literary quotation: during the period of Daoguang’s reign in the Qing Dynasty, in Dawan of ancient Luojian (present Luohe), there was famine in successive years. The district magistrate of Shouzhou appointed a man surnamed Zheng as the head of the Luojian Shire. After Zheng proceeded to the new official post, he worked hard for common people and governed the shire well. He also encouraged the villagers to engage in farming and business and suggested on making bean cakes as commodities. Hence, at that time, the bean cake was in vogue in Luohe or whereabouts and had an influence far and near.
