Jiangmao Boiled Dumping

It is a famous local snack of Anqing. The stuffing is made by meat of the hind legs of the black pig living in mountain area, with shelled shrimp and preserved pickle as the seasoning. Cooked with pure chicken soup or bone soup, the dumpling features thin skin, delicate meat and fresh soup, very popular among people. Jiang Qingfu, its creator, wears a fistful of white body hair on his neck, for which comes the nickname of "Jiang Mao (hair)", so it is renamed as "Jiangmao boiled dumping". Now it is listed as "local specialties" by Anhui Province travel bureau.

Lotus Root From Snow Lake

differing from the ones growing in other places of Qianshan County, which have seven holes and eleven threads, with nine holes and thirteen threads, lotus root of tribute from Snow Lake is very fresh, sweet, brickle and delicate, really the nonesuch among lotus roots. It is said that, after Zhu Yuanzhang’s formally founding capital in Nanjing, the local people started to pick lotus roots in 1st August every lunar year and would deliver the first batch to the capital as tribute, hence comes the name of “tribute lotus root from snow lake”. The color of its skin is as pure as jade; quality is delicate; the body is square rotundity with seven arrises and the diameter generally ranging from 10cm to 12cm. The biggest one can be above 8 kilograms. And, it is good to eat no matter it is boiled or not.
