It is said that Guilin rice noodle is originated from Xing'an County. One legend is about the time when Ling Canal was completed by Emperor Qin Shihuang. During his journey around Li River in Guilin, he was extremely happy to see so many carps whose barbell and fish maw are his favorite dish for drinking. So he gave the boatman much money to ask him to catch carps for him. Finally, he had killed many fishes which made the Carp God so angry that it threatened to kill Emperor Qin Shihuang as the food of the fish. The Water God knew this news and suggested that the Carp God should find out another way to solve the problem. So the chief became quick-witted and made rice noodles by grinding the rice. The rice noodles he made could be divided into two shapes- round and flat which were just like the shape of barbell and fish maw. It turned out the Emperor Qin Shihuang loved this excellent food very much, so Guilin rice noodle has came into being from then on.
With the reputation of "a kind of culture on the table", it has owned a lasting market for more than 2000 years, popular among people both in China and foreign countries. And Guilin Rice Noodle Festival has been held for three times in Xing'an successfully by now.
