Enshi Featured Food:
the preserved meat of Tujia People is featured with yellow color, solid meat and unique flavor. After being smoked, the meat should be put in the place with a draught and can be kept for tow to three years without rotting. Before eating, the meat is baked on the fir until the skin becomes yellow and then ii is put in the warm water until the skin becomes soft. Then it is cleaned for use. There are many cooking methods of preserved meat and differ with different parts. Generally, the pig steak and the feet of pig are braised for the making of hot pot while other parts will be fried or steamed with Zhaguang Pepper, Garlic sprout, wild vegetables and rice. Among all the dishes are preserved meat steamed with rice, preserved meat fried with Zhaguang pepper, Sugar preserved meat, fried preserved meat with Jueba and Preserved Pig Feet Hot Pot and so on.
Boyang Bean Curd
The main materials of Boyang bean curd are the top soy bean, the spring water in Longdong bay and many natural spices, which are processed in dozens of procedures by unique technique. Its characteristic lies in that in the whole process, no plaster and other chemical products are added. And the local spring water and traditional techniques are its secret. As a treasure among all kinds of bean curd, the golden yellow bean curd is delicious, palateful and exquisite. Eaten in fresh or fried with spice or chili, it is a lasting appeal.
sour chili is made of Enshi local red chili and corn meal. Sour chili as bed charge put into the steamed meat and braised pork, the meat is not oily but fresh and easy to digest and absorb. Also, it can be made into mash with corn meal, called sour chili mash.
Nostoc is a diverse genus of simple algae, belonging to the blue-green group. Like dark green pearl, it is a wild plant without any root and leaf and an indeed natural green food. Steamed, fried or made into soup, it is fresh and delicious whether with salt and sugar or not. In the An Outline Treatise of Medical Herbs, compiled by Li Shizhen, it is praised as a healthy food for keeping fit.
Gege is made by steaming pepper sauce and other main materials. They are steamed in tiny steaming baskets on big fire. There are many kinds of Gege, namely, beef Gege, Mutton Gege, Pork Gege and Pig Intestine Gege and so on.
