Chunmei Braised Sea Cucumber In Brown Sauce
The fine sea cucumber produced in Beibu Bay is the major material of the dish, and it is braised with Xiajiaoniang mushroom (stuff the dried shrimp into the mushroom) after sea cucumber is soaked for a while, cut in slices and simmered over slow fire; while making Xiajiaorang mushroom, cooks assort lilac daphne and diced ham together which are flower-shaped and called "Chunmei (the plum blossom of spring)". This dish is tender, but not thoroughly cooked and is stir- fried with thick gravy. The delicate flavor is strong and the taste is fresh and tender.
Stewed Water Fish With Chicken Wing
Water fish is soft-shelled turtle. At first viscera of the soft-shelled turtle is cleaned and cooked in boiling water; chicken wings are stewed with frog, ham, yaozhu, red meat, red date, dried longan, ginger and other ingredients; at last the turtle and chicken wings broth are stewed in a casserole sealed with sand paper. This dish is the top-grade food to entertain guests at a banquet, characterized by delicious and tender turtle meat and nourishing chicken soup.
The so-called pearl is sea worm that is very nourishing and top-grade seafood. The soup of dried sandworm is milky white and very delicious which is called “the natural gourmet powder”. Fried pearl brochette is very crisp, fragrant and pleasant to taste and is the best food going well with wine.
