Braised mutton in brown sauce

The choice of materials for braised mutton in brown sauce is fastidious. The sheep must be a “Huake sheep” (young Hu sheep). The meat of this kind of sheep is soft and low in fat; the skin is thin and smooth. This is a nourishing dish common in the winter of Wuzhen. There’s an old folklore saying: “a meal of mutton in winter is better than several grams of ginseng”.

Baishui boiled fish

The fish in Wuzhen cuisine live in the water that is not polluted. The meat of the fish is soft and delicious, a rare treasure among fresh water fish. This fish tastes wonderful no matter whether boiled or fried.

Sisters-in-law cake 

Sisters-in-law cake is a traditional snack in Wuzhen. It has a history of 100 years. According to folklore, this snack was made because of quarreling between sisters-in-law, from whom it gets the name. The appearance of sisters-in-law cake is just like chess cake, but it’s bigger. The ingredients are similar to crunchy candy: flour, white sugar, sesame seeds and pork oil. It’s more delicious than crunchy candy, with the characteristics of oil but no grease, crisp but not brittle, fragrant and glutinous, as well as saltiness within sweetness.

Kaoru bean tea  

Kaoru bean tea is also called "smoked bean tea". The main material is kaoru bean, with other ingredients, such as sweet osmanthus, fried sesames, orange skins, radishes, suzi leaves and fried baizi. Thus, people in Wuzhen say “eat tea”. Kaoru bean tea is very fragment. It’s nourishing and a good drink to serve guests.
