First Class Crab Hugging Egg, Fuzhou

Famous dish of Fuzhou. Take the shuttle crab, specialty of Fuzhou coast, clean it and put it into cage steamer tray , steam it on hard fire, take its shell off, get its meat. Then put it into a oil pan, add mushrooms, lettuce, onion white and oyster ,pour the egg liquid on it, spread it out into the shape of full moon, shake the pan constantly until the both sides take on a golden color. Spread it with old liquor and plant oil. The golden color and full moon shape with outside soft and inside crisp give a best flavor.
