Gannan Featured Food:

Duoshihe

Duoshihe is a local particular food too. And its process is to separate meat(mutton) from bones first. In the next step the cooker will cut the mutton into pieces and pile the mutton pieces up, which will be mixed with spice and salt. In the third step the cooker will put part of the mutton pieces up into a goat stomach, which has been cleaned first, with a clean heated stone together. When the goat stomach is full, it will be tied tightly with a string. Because the goat stomach is heated there are much heat in it. After it is cool, the cooker will make a cut on the goat stomach to let the mutton juice flow out and cut the whole goat stomach into pieces completely. The cooker will invite the guests to eat the mutton with the mutton soup together. And it will be a pleasure. Its flavor is very particular and very delicious and the taste is second to none.

Haju

Haju is a particular food. Its condiments are minced mutton mixed with shallot and salt and when Haju is boiled it need to be stirred continuously. In the next step the local Tibetan people mix the boiled mutton soup with spice and use steamed highland barley cake which will be made like ladles or scoops first to hold the spiced soup. The food has a particular flavor with much nutrition and is helpful against the Tibetan cold climate. it is usually eaten as their breakfast.

Sausage

There are two kinds of sausages according to their materials and condiments. One kind is to rest on minced animal lungs, hearts, kidneys mixed with garlic juice and then both of them will be put into bowels. Another kind is to rest on mince, which will be dripped into some animal blood and mixed with salt and spice and then both of them will be put into thin bowels. After it is boiled well with water, it is very delicious and nutritious

Tibetan Steamed Bun With Fillings

Tibetan steamed bun with fillings is a local particular food too. Its condiments are minced mutton or beef mixed with spice and salt. And then the fillings will be steamed with un-fermented bread together. Its shape is like a bottle. The steamed bun with fillings is very delicious and nutritious and it has a reputation of "crystal steamed bun with fillings" because of its thin flour skin and heavy juicewith fillings .

Zanba (highland Barley Cake)

The process is to mix ghee and tea together in a bowl first and then to put steamed highland barley flour, milk residues and sugar into them and continue to stir for a moment. As they eat it the local Tibetan people will stir it. Highland barley cake is a local main food which is favored by the local Tibetan people.
