Yam is one of the three treasures of Pingliang. The Pingliang Government Records compiled in Ming Dynasty has already recorded the planting of the yam. Pingliang yam has big loafs and bears a shape of chicken’s leg, with flesh in shallow yellow color, and sticky sap, is excellent invigorant.
