It is a widely accepted custom of Hakka people in Gannan to drink Hakka Lei Tea, particularly familiar between the women of association. It is made as follows: first pound the leaf of the tea, thin or thick, into pulp with a mortar, then put some oil, salt, ginger, sesame and shelled peanut...etc into it in proper amount. Then fry and crush it into tea mire, which is called" Xiangliao". When drinking, you can put a little tea mire into boiled water, sometimes with an addition of bits of diced garlic, vegetables, fried bean curd, meat, black mushrooms, powder stem, powder skin and, fried and crushed chops, shelled peanut, bean...etc. Then a cup of Hakka Lei Tea, good-looking in color, smelly in flavor and pleasant in taste is made.
