Zhonghe Tofu Pudding
Zhonghe Tofu Pudding is famous in and out of Guang’an City. Rub the soybeans with a stone mill to make soybean milk. Then use a cloth to filter the soybean milk. The dregs and sprinkles water are used to feed hogs. Pour the soybean milk into a cauldron to boil and then remove the froth. Use a spoon to put the gypsum water into the cauldron well-distributed. Use a soft fire to boil the water milk and a cauldron of Tofu pudding is formed. Scoop up the Tofu pudding into a bowl and add some seasonings: the red pepper oil, the sesame seeds, the sesame oil, the green pepper with bean petals, the ginger and garlic, the salt, the black mustard, the minced green onion, the parched sesame seeds(few using monosodium glutamate).
The families use Tofu pudding to entertain guests. Now, Tofo pudding restaurants are popular in the villages and towns of Yuechi County. Several meat Tofu pudding hot pot restaurants also sell meat Tofu Pudding.
Salt Preserved Eggs
The salt preserved eggs full of special style is made by duck eggs. The ways of making salt preserved eggs are like this: first use the clear water to wash off the contamination on the duck eggs and air them. Then put the Guang’an tea into an iron saucepan to boil strongly. Then put the tea into a tile cylinder and after the tea is cool, put the salt and duck eggs in and seal it. Several days later, take out the eggs and boil them. The salt preserved eggs are good for drinking and are best foods for breakfast.
Yuechi Rice Noodles
Yuechi rice noodles include dry rice noodles and wet rice noodles. Put the dry rice noodles into a basin and pour some hot water to soften them and add some cool water then use a U-shaped bloom water filter. Put the noodles in the bowl and add bone soup, butter, salt and other seasonings to treat guests. Compared to the dry rice noodles, Yuechi wet rice noodles are more tasty and easy to digest and they are good for all ages. Every early morning people go to “street of a rice noodles” to have wet rice noodles in an endless stream.
Jialing River is the biggest branch of Yangtze River and it goes through Wusheng County from north to south with a total length of 117Kilometers. The zigzagging Jialing River is abundant with unique and various natural fishes. Several thousands of years, the industrious Wusheng people have created the unique natural way of cooking fishes in the long-term production activities. “Zhazha fish” is made by selecting 10 kinds of small natural fishes in Jialing River and split on at once and cooked by the way of red-roast and fried. The fish is from the river, so Zhazha fish is a natural fish and the fish is small in bulk, so people call it Zhazha fish.
Bean Curd Of Gu County
Because of supernatural formula, water and long production process, Bean curd of Gu County is tender, tasty and worth eating one hundred of times. The special bean curd feast includes 180 kinds of dishes. Make the bean curd as thin as approximately 1 square inch with 16 panes. Then season the bean curd with halogen sesame oil (boiled by Chinese cinnamon, sweet fennel, dill and so on) and dry till the color turning into puce. Slice the bean curd into strip or small panes and put it into a plate. The bean curd is soft, fragrant delicious and good for drinking wine. It is an excellent present for friends and guests.
