Zhonghe Tofu Pudding

Zhonghe Tofu Pudding is famous in and out of Guang’an City. Rub the soybeans with a stone mill to make soybean milk. Then use a cloth to filter the soybean milk. The dregs and sprinkles water are used to feed hogs. Pour the soybean milk into a cauldron to boil and then remove the froth. Use a spoon to put the gypsum water into the cauldron well-distributed. Use a soft fire to boil the water milk and a cauldron of Tofu pudding is formed. Scoop up the Tofu pudding into a bowl and add some seasonings: the red pepper oil, the sesame seeds, the sesame oil, the green pepper with bean petals, the ginger and garlic, the salt, the black mustard, the minced green onion, the parched sesame seeds(few using monosodium glutamate).
