The soup of Houjie Lai noodles, stewed with pig bones, pig stomachs, dried tangerine peels and fruit hulls, is thick and light, which thus makes the Lai noodles taste especially fresh, tender, smooth and delicious. The goose skin slices, assuming red after broiled, cover the surface of the noodles like a layer of gold; the small silvery white cylindrical noodles soak in the soup like silver bullions. Therefore, Houjie Lai noodles are also called “silver Lai with gold goose”.
