Suantang dishes are Miao’s traditional dishes. Suantang in Chinese means sour soup. The sour soup is the fermented water kept in the earthen jar for three to five days. To make Suantang dishes, Miao people boil other raw materials such as meat, fish, and vegetables in the sour soup. Among the Suantang dishes, Suantang fish is the most famous one.
