Haidong Featured Food:
There is a saying that Guide is famous for pears and Xiangtang for melons, while Huangyuan for Ganban fish. It is absolutely true. Qinghai province abounds in Huang fish, which is famous far and near for its fleshy, tender meat and delicious taste. To get out the viscera, cleaning, and to put them on hot stone or sand by size, when dried it is Ganban fish which can be cooked into flavored dish, tasty tender, after being saturated soft.
Hulless oat or highland barley is peeled, cleaned by water, cooked in the pot until the surface bursts, then get out for cooling, and mixed with Tianpei powder, sealed in the jar with a constant temperature about 15 centigrade or so. After fermented for 3 to 5 days, it can be eaten, mellowed, cool, sweet, refreshing in summer and warming stomach in winter.
Sanzi, a kind of fried pasta, is the main pasta food for treating guests by Hui minority and Sala minority people in Qinghai in annually celebrating traditional “Gu’erbang festival”, “Er’de festival”, “Shengji festival” and marriage or funeral. Its main ingredient is Touluo flour, which is mixed with salt and seasoning, then striped into the oil lap after lap for frying.
