Jiaji Duck is abundant in Jiaji Town of Qionghai City in Hainan Province. It is said this variety of duck was the improved type that introduced into Hainan Province from Malaysia 300 years ago. The duck was first cultivated in Jiaji Town, then spreaded throughout the province. The growing methods are quite special. At the beginning, they feed the just born ducklings with fresh water petite fishes and little shrimps, or earthworms. Then after about two months when the ducklings are about to grow some feather, they enclose them in small cages and narrow the range of their activities. And the ducks are fed with rice and some other kinds of feeding stuffs. Within a period of 20 days, the ducks can be grown to be fat meat ducks.
This kind of duck is featured by the fat meat, which tastes quite fantastic. There are various cooking methods of the duck, yet the most famous one would be the steamed sliced duck, which maintains the original tastes and flavor. Roast duck is flavorful, but it is not the actual taste of the duck.
