Oil Fish, Hechi

The small fish, only 50 grams in weigh, is long and round in shape and usually prefer gathering together. They are green heads, black backs and white bellies. The scale near their rib is twinkling and is just like a current of lighting when they jump out of the water. Oil Fish, just like its name implied, you don’t need to add oil when fry the fish. After a few minutes’ fry with slow fire, the fish can bring out oil itself and never stick to the pan. There is a saying which says “One man fries fish, everyone smell the fragrance”. As Oil Fish is rare species, the government has already preserved it as a rare animal and has forbidden catching.
