Chicken Steamed in Bucket is a famous local dish. It can be dated back one hundred years ago during the Rein of Emperor Xian feng in the Qing Dynasty. Because the boiler used to cook the chicken was bucket like, this dish got its name. This dish chooses tender live hen of less than 3 years old and thick gravy to cook. This dish is of golden color, fat but not greasy, tender but crisp. Ma Yuxing Chicken and Duck Restaurant located south of the Drum Tower Square cooks this dish best.
