It is a kind of wheaten food. A producer puts the dough of mixed buckwheat flour, Kaoliang flour (now wheat flour is usually used) into Helao rack and sits on the lever. Then, the dough is extruded into strips which are cooked directly in a pot. It is unknown when the unique tradition passed down to nowadays.
