Scalpers cultivated in West Shandong are very sturdy. Therefore the produced beef is in high quality and tastes delicious. Local people usually select beef of one to two year old scalpers. Bones and fat will be weeded out. Then the selected beef will be preserved in a pot for about a week. After that fry the beef with sesame oil and then add ten kinds of seasonings into it. The whole procedure takes ten steps. This course features lasting aroma, attractive color, and delicacy.
