Pumpkin Stewed Rice

In the autumn harvest, the pumpkins planted in the East and West Mountains of Mile County are ripe. A woman of the Yi nationality picks a basin-sized pumpkin from the field at will. Cut a bowl-sized hole at the top of it with knife. Draw out the melon plup. Put rice, preserved meat and potherb into the pumpkin. Add some water, oil and salt. Cover the hole with the pumpking rind. Put it on the stove and cook it. About half an hour later, “pumpkin pan " sends forth fragrance. Open the cover, you can see snowy rice, golden pumpkin, red preserved meat and verdant potherb. Let people have a very good appetite immediately

Steamed Chicken

Steamed Chicken is a unique flavor dish in Yunnan. The source of the dish is Jianshui in Honghe. It belongs to a noted dish in the south of Yunnan. It’s called as “the first dish in South Yuan”. It’s rated as “the state banquet dish”.It’s said that the dish was invented by Yangli who was born in Jianshui. It has a history of more than 200 years. Steamed Chicken is cooked with some rare medicinal materials, such as, notoginseng, gastrodia tuber and Chinese caterpillar fungus. So it’s called the Notoginseng Steamed Chicken, the Gastrodia Tuber Steamed Chicken or the Chinese Caterpillar Fungus Steamed Chicken. It has the function of replenishing Kidney.

Lion Cake

Lion Cake is a traditional noted snack in Jianshui County. It’s said that it was ascribed to a man working in “the Rong Xiang Zhai”, whose family name was Wu. Because it looks like the hair on the lion’s neck, it gets the name of “Lion Cake”. It uses choice glutinous rice, rice-made maltose and a touch of sucrose as raw materials. Dip glutinous rice in the clear water for ten to fifiteen days first. Steam it then. Roll it into a ball. Press, shred and then dry it in air.  Fry it in the pan. After it cools off, wrap it with 80% maltose and 20% sucrose. Squash it. Cut it into pieces. It’s crisp, sweet and fragrant. It’s delicious.

Kaiyuan Sweet Jiaotou

Kaiyuan Sweet Jiaotou use high-quality fresh Qiaotou as raw material. Wash and then dry Qiaotou. Mix Qiaotou with salt, hot pepper, brown sugar, wine and stir them. Put the mixture into a special pot. Churn it termly. Use earth to obturate the mouth of the pot finally. Preserve it for three months. It's golden. It's not too sour or too sweet.  The taste is delicious. It can be eaten as a course. It can also be used as a seasoner to make all kinds of delicacies. It has the functions of invigorating the spleen and stimulating the appetite.
