Shortbread of Ji’an

Materials used to make the famous shortbreads are fine and exquisite and the process of baking is also very careful. The dough is kneaded with lard oil, sugar, dusts of sesame seeds, the five spices(prickly ash, star aniseed, cinnamon, clove and fennel),Chinese prickly ash, shallots and salt in it for many times and then it is baked with sesame seeds spread on the surfaces. The shortbread pancakes are a little scorched, crisp and soft and you will never become bored with the  appetizing pancakes
