Crystal Pig’s Feet is a famous dish of Zhenjiang. It has got a history of more than three hundred years. The Crystal Pig’s Feet served in the Yanchun Restaurant of Zhenjiang more deserves the reputation it enjoys. The lean meat of the Crystal Pig’s Feet is light red in color, and soft and easy to melt though being cool. The broth jelly is transparent and smooth. Therefore, it is called “crystal”. The jelly is also flexible but not hard, and neither too fat nor too greasy. With elegant color and superb flavor, it tastes refreshing and stimulates the appetite. If it goes with ginger shreds and aromatic vinegar, it has another flavor.
