According to legend, Qing dynasty's porcelain workers like to fill minced meat, ginger, onion, cooking oil and salt into a chicken, and then wrap the chicken with a piece of lotus leaf, after that, used the porcelain clay(mixed by Shaoxing wine) to wrap it. When the above procedures finished, the works covered the chicken by the kiln dregs, and the delicious chicken could be served after a ten hours' stew. At last, this dish became one of the most famous dishes through the efforts of some restaurants to develop the cooking method.
