Jiexi Pestled Tea
Jiexi where a lot of the Hakka people live has the customs of drinking pestled tea. In summer, drinking pestled tea can even substitute for lunch. The pestled tea uses peanut, batched jute, fragrant tea, Yuanxiang, Jinbuhuan, Kulaxin as raw materials. Put them in a ceramic mortar with screw threads. Use a wooden stick to pestle them. The pestled tea has a lot of flavors, such as salty taste, fragrance, sweet taste, bitterness and piquancy. After drinking it, you will feel your throat is very comfortable. Until now, dinking pestled tea is still a reserved program when the Hakka people receive guests.
Huaqing Bamboo Shoot
Qinghua Village in Xichang Town, Jiedong County teems with bamboo shoot. Because the land there is fertile and rich in all kinds of minerals, Huaqing bamboo shoot is big, crisp and sweet with few dregs. Whether it’s fried or used for making soup, it’s very delicious. Slicing fresh bamboo shoot and then drying off in the sun can make fresh bamboo shoot into dried bamboo shoot. It has the same color as amber. Jinghai sea area in Huilai County is the home of the abalone, which is famous in China. This sea area is a neritic area. There are a range of reefs. The sea is rough. Mianhu Waxgourd Cubes
The waxgourd cubes produced in Mianhu Town, Jiexi County have had a history of more than one hundred years. They use good waxgourd from Chaoshan and superior white crystal sugar as raw materials. It combines the traditional technology with the modern mechanical assembly-line technique. After a series of processes including cutting away the skin, cutting into thin strips, being pickled in limewater, rinsing, boiling, rinsing again, being dipped in sweet water, stewing and cooling, waxgourd cubes are completed. Mianhu waxgourd cube is in the form of strip. Its surface is dry while its inner is wet. It’s transparent and looks beautiful. It’s crisp and sweet without dregs. It has the function of clearing heat.
Gelanyang is produced in Taoshan Village, Paotai Town. It’s a kind of kale. Its leaf takes on the form of a horse’s ear. The Gelanyang planted in the field of the “Red Gate Tower” is authentic in the top grade. When it’s quick-fried with fierce fire, it’s green and crisp, sending forth a delicate fragrance. It’s really a good dish. When many overseas Chinese who live in Southeast Asia return home to visit their relatives, the dish they hope to taste most is Gelanyang. It shows the attraction of Gelanyang.
