Jellied Bean Curd
As a famous snack in Gaotang County, the jellied bean curd, also named Dou fu nao, is carefully made from selected ingredients. The bean curd is white and clear, tender but not loose. The soup is clear but not tasteless. The oil is fragrant but not greasy. The fragrance of bean curd reaches your nose if you eat it. You may find the taste of the meat, but do not feel the raw flavor. This dish is hot but it dose not irritate your nose. The jellied bean curd is made from selected first class soybeans. Hot lover can add some fried red pepper while eating.
Liaocheng Guada Pancake
It was first originated in the Qing Dynasty and has a history of more than 200 years. It is already included in China Famous Food Cookbook. It is a fried and baked pancake with stuffing in it. Guada Pancake produced in Sha Town is especially well known. There are many kinds of pancakes depending on the stuffing, such as meat, egg, and mixture of meat and egg (also named as “wind mixed with snow”), and so on. It is very fragrant and soft, and has a mild taste. The pancake has both stuffing and flour, which is especially welcome by the people. It is perennially supplied by sellers in the stalls in busy down town areas or country festivals.
Eight Pieces Cookie
It is a famous traditional snack in Liaocheng. The eight pieces cookie is a kind of fried snack. Because the fried cookie is separated into eight oval pieces, which connect each other in the end, it is called eight pieces cookie. The fried dough pieces become expended and golden in color. It is so crisp that if it drops on the floor, you can not pick it up. Eight pieces cookie is one of the major foods for breakfast in Liaocheng. It can be storied for long and is a very delicious breakfast food.
Wei’s Smoked Chicken
Known as “Liaocheng Iron Cock” by Mr. Lao She, Wei’s smoked chicken was first originated by Wei Yongtai living in the North Gate in the fifteenth year of Jiaqing Era in the Qing Dynasty (1810 AD). It has a history of more than 180 years so far. Wei’s smoked chicken use choice materials and is cooked in care. It has pretty appearance, tender flesh, crisp bones, bright color and delicious taste. When eating the chicken, the fragrance is very special and lasts long. It goes well with wine or tea.
Laowangzhai Donkey Meat
As a traditional food in Gaotang, the donkey meat in Gaotang is well known both near and far. The Laowangzhai donkey meat in Yinji Village of Gaotang County, which has a history of more than 300 years, is the best one among them. Since local people like to call donkey as ghost, donkey meat is also called ghost meat. The processing method of Laowangzhai ghost meat is very particular and exquisite, using many traditional Chinese medicines. There is a saying that when entertain guests, “no feast without donkey meat”.
