It was first originated in the Qing Dynasty and has a history of more than 200 years. It is already included in China Famous Food Cookbook. It is a fried and baked pancake with stuffing in it. Guada Pancake produced in Sha Town is especially well known. There are many kinds of pancakes depending on the stuffing, such as meat, egg, and mixture of meat and egg (also named as “wind mixed with snow”), and so on. It is very fragrant and soft, and has a mild taste. The pancake has both stuffing and flour, which is especially welcome by the people. It is perennially supplied by sellers in the stalls in busy down town areas or country festivals.
