Nanchang Featured Food:
French And Italian
Just been to two excellent restaurants here in NanChang. One is called Le Bistro 100 and the other Cafe Roma. Both restaurants serve some of the best French food and Italian food that I have had in China. The address and telephone number for Le Bistro 100 is 100 RongMenRoad 6100100. Not to far from the TengWanGe. The other is on FuHeBeiRoad 6691101. Actually they are in walking distance from each other. If you are looking for western food I would highly recomend either of the two restaurants.
Nanchang Rice Noodle
Nanchang rice noodle has a long history. Being white and thin, it can remain its shape after a long time's cooking. Its raw material is rice. After dipping, grinding, draining and plasma collection, rice is made into rice noodle. It is convenient for cooking. It can be cold and dressed with sauce, fried, cook with water, adding in ginger, garlic, sesame oil, sauce soy, shallot, pickles, especially capsicum and pepper which are loved by Nanchang people. Try Nanchang rice noodle once; cannot forget it for the whole life.
Poyang Lake Lion Heads
Poyang Lake Lion Heads is a famous dish in Nanchang. Made by special method, it is soft and tasty.
Method to cook the dish
1, Cut taro into small cubes and add some salt to make them soft. Chop the pork into the shape of rice. Mix pork, taro, water chestnut (minced), ham (minced), dried scallop threads, ginger (minced) and egg together. Add dried farina, salt, sauce soy and pepper. Divide it into four parts. Put one salt yolk into each part and the “lion heads” comes into being.
2, Heat a wok with some salad oil. When the salad oil is warm, put in Lion heads and deep fry until golden. Add some soup stock until cover lion heads. Add some salt, alcohol, sauce soy, shallot and ginger. Braise it for about two hours.
3 Take it out and pick out the shallot. Heat the wok with some water until get it boiled Add some oil and put in vegetable, salt, chicken essence seasoning, monosodium glutamate. Fried them for a moment and take them out to a soup plate. Put the original soup of
Hometown Crispy Rice
Method to make the food:
1, make crispy rice into pieces. Cut pig blood into pieces. Cut sapor vegetable into pieces. Cut chicken breast into pieces and put on oil. Cut bamboo shoot into pieces. Cut dried pepper, shallot, gingers.
2, Heat the wok. Fry sapor vegetable and bamboo shoot for a short moment. Add in soup. Put in pig blood. Clear the bubble when the soup is boiled. Add in salt, chicken and monosodium glutamate. Thicken with starchy solution boiled. Put it in a bowl. Add in shallot and sesame oil.
3, Heat the wok with oil. Add in cripy rice and fry it until well-done. Put it in plate.
4, Put the dish of stage 2 over the cripy rice. Serve the dish.
Method to make the food:
1, Heat the wok with some oil. Fried the pop chips and get their oil dropped. Keep a little oil in the wok and put in some sugar to make sugar liquid. Add some sugar liquid to the pop chips and make a rockery with them in one end of the plate.
2, Slice ginger and cut shallot. Heat the wok with oil. Cover the drumstick with egg white and wet amylum. Put the drumsticks in the wok.
3 keep a little oil in the wok. Fry ginger and shallot. Take out the ginger and shallot. Add in garlic and soup stock. Add in drumsticks, alcohol, salt, monosodium glutamate and fry for a second. Thicken with starchy solution. Sprinkle with oil, pepper. Put it in the other end of the fish plate.
