Steamed Intestines in Bamboo Cup, Nanchang
Method to cook the dish
1 cut intestines into 2cm wide diamond shape cubes. Slice gingers. Heat the wok. Add in water, alcohol, sliced ginger. When the water is boiled, put in intestines for a moment and take out.
2 Put minced gingers, dried pepper and intestines in a pot and pickle them for one hour with alcohol, sauce soy, salt and monosodium glutamate.
3 Mix together ginger, dried pepper, spiced rice flour together pickled intestines. Add in a little water.
4 Take a bamboo cup and brush it with oil. Put in some lettuce. Add in the ingredients in step 3 and steam them to well-done.
5 Sprinkle it with hot red oil and dish off.
Characteristics: with the fragrance of bamboo, delicate and hot.
