Cured Rabbit Meat
Cured rabbit meat is a delicious food only made in Spring Festival in Gutian County. After slaughtered, a whole rabbit is put into a pot, called “Mishao” by local people, to roast. It looks bright in colour, tastes dry and tender and smells fragrant and mellow. Local people usually chop up the whole rabbit and mix with ginger and vinegar to steam. It tastes hot, sour and sweat and is a famous delicacy to go with liquor.
Ningde Scapharca Subcrenata
The shell of Ningde Scapharca subcrenata is thin and the meat is thick. It tastes tender and delicious with much nutrition and is a good dish for banquets and feasts.
Yezong Of Ninglu (a Kind Of Dumping)
It is a local food of the She nationality. A rectangle-shaped dumpling is made of glutinous rice wrapped in reed leaves. Generally the glutinous rice is soaked in alkaline water for several hours before wrapping. Then boil until it is cooked. The cooked leaves are light yellow, sticky not muddy. If mix some peas or some other beans in glutinous rice, it becomes the “bean dumpling”. The bean dumpling is appetizing not greasy, good-looking and with special flavor.

The shell of Razor fish of Xiapu is thin and the meat is crispy. No matter how you cook, by stewing, steaming, boiling or frying, it tastes mellow.
