Originating from imperial secret recipe for dining during the Tang Dynasty, Lingzhou Laowan Shouzhua (Mutton Eaten with Hands) came to be part of dining culture of Hui people which combines the flavor of court dining with profound techniques of folk food through Wang’s clan’s painstaking development by passing on from one generation to generation thus becoming delicious food of good quality and full of folk flavor. With over fifty kinds of refreshments in good quality such as snacks made from wheat or rice flour, dishes of fresh vegetables in wild, precious tea for nurturing and lamb head soup, the restaurant serves three kinds of Mutton Eaten with Hands , namely Taizi(prince)Shouzhua, Guifei(high-ranked imperial concubine )Shouzhua and Sangong (three palaces) Shouzhua. Lingzhou Laowan Shouzhua is refined in choosing ingredients and materials, unique in cooking and done with meticulous care, reflecting the specialty of modern nourishment with the style of scientific arrangement in materials, rational structure in nutrition and unusual way in eating.
