Suantang (sour Soup) Dishes
Suantang dishes are Miao’s traditional dishes. Suantang in Chinese means sour soup. The sour soup is the fermented water kept in the earthen jar for three to five days. To make Suantang dishes, Miao people boil other raw materials such as meat, fish, and vegetables in the sour soup. Among the Suantang dishes, Suantang fish is the most famous one.
Chongchong cake is a kind of local snacks of Dushan County, Qiannan Buyei and Miao Autonomous Prefecture, South Guizhou. It has a history of hundred years. It tastes fragrant and sweet and has a nice chewy texture.
Pickled vegetable is a kind of very famous traditional local flavor of Dushan County. The tradition of making the sauerkraut began from Qing Dynasty. The product is bright and lustrous. It tastes sweet and sour, crispy and savoury. It is good for snacks or it can be cooked with other food, such as meat or fish.
