how could I avoid to be too hot when I eat hot pot?

I know that there is a most famous cuisine in Chongqing. That is hot pot of Chongqing. I want to taste but it is said to be very hot, how could I avoid to be too hot when I eat hot pot?

- It is really a problem that most western don’t eat hot foods. But you don’t mean to get Chongqing if you don’t eat hot pot. I advise you to drink some beer when you are taste the hot pot. Or you could ask the chef to put ess chillis in it when cooking.
