Founded in 1934, Qingyazai restaurant is famous for Shuan Yangrou (Mongolian hotpot). the well-known "whole lamb banquet" which takes meat from every part of the lamb using baking, rinsing, boiling, steaming, or frying to prepare seventy to eighty different dishes. These delicacies require great skill in cutting,, handling of heat, and condiments which mainly are made of oil, salt, sauce, vinegar, sugar and other sauces or spices. The representative culinary methods are quick-frying, baking, and chafing. The main feature of the delicacies is fresh, tender, fragrant and crisp to the taste.

Besides the famous Shuan Yangrou (Mongolian hotpot), Qingyazai restaurant also has other famous dishes, such as, quick-frying shallot with mutton, stir-fry big chicken cutlets, braised mutton, fried steak, guoshao mutton, and quick-fried soft meat ball.
