Wucheng Xuan Pie, Dezhou

Xuan Pie is a famous traditional food, aged over three hundred years. It is said that in a spring in the 17th year in reign of Emperor Chongzhen, King Chuang Li Zicheng lead his army to attack Beijing , on the way via Wucheng. On smelling of the fragrant of Xuan Pie, he got off the horse, walked straightly to the restaurant made Xuan Pie, and had a feast of Xuan Pie. After his dinner, he watched the process of pie-making, and said: ‘It’s better to call it Xuan Pie.’ Thereafter, the fame of Xuan Pie has spread to the rest part in Shangdong Province and the neighborhood areas, then throughout the country. The unique process of pie-making contributes to the unique taste of crispy, fragrant. Xuan Pie calls for a high quality of ingredients—excellent powder and well-selected meat. It pays great emphasis on its process. Due to different seasons and climates, the dough-making verified accordingly. The fillings are made by pork, beef, mutton, or eggs. The finished pie is in golden plate-sized appearance, with its width about a finger and a taste of crispy outside and tender inside. You’ll never forget it for its pervading fragrance and delicate taste once tasted it.
