The dish was served as a tribute in the reign of Emperor Qianlong (1736 AD-1795 AD) in Qing Dynasty. Crucian in Xiayi City Lake is selected as the ingredient. Cut open its abdomen and take out the entrails without scraping the scales. After the fish is cured, fried, and stewed with many seasonings added into it, it will be ready. With a flavor strong, pure and aromatic, fish bone crisp while not out of shape, the delicacy is often served in banquets.
