As a famous specialty of Yaan City, Yaan Fish is also called "salmo playtcephalus", which is a peculiar breed in mountain areas of Middle Asia. Since the fish grow in Zhougong River, the branch of Qingyijiang River within Yaan City, it is called Yaan Fish. Taking the shape of carps, the Yaan fish is fat and big with scales as thin as those of Schizothorax prenanti. Due to its tender and delicate meat, Yaan fish usually is made into the local famous dish" Stewed Yaan Fish with Soy Sauce  in Casserole."
