Tianshui noodles in sour soup

The sour soup is a very important part in doing the noodle. When making the soup, people choose fresh and tender edible wild herbs, such as lettuce leaves, clover, shepherds purse, or some planted celery, cabbage leaves, chop them into small pieces, cook the vegetables and add some ferment to the soup. Then they put the soup in a sealed pot. Three days later, the sour soup is ready.

When the soup is ready, people cook some noodles and put them into the heated soup, add some chopped green onion and caraway to the noodle. The delicious noodle is done then. It is said Tianshui Noodles in Sour Soup has the effects of clearing heat toxin and are good to one’s health. The soup can even be drinks in summer.
