rice pilaf is called “Bolao” in Uygur language. There are various kinds of rice pilaf. Besides mutton, people also use beef, horse flesh, chicken, goose, snow chicken, wild chicken. Some times they make sweet rice pilaf or vegetarian rice pilaf with raisin, dried apricot, dried peach.
