Mantou is a staple food made from flour combined with leavening agent, and kneaded, shaped into usually round pieces and steamed. The steamed mantou made in Pucheng County is shaped into a rafter, so it also called “rafter mantou”. It is a popular local food that has a history of 200 years. It is said that in the ancient time the local officials often gave the steamed mantou as a tribute to the royal family or some important officials. Pucheng steamed mantou also sells well in other provinces. The making of the steamed mantou is also special as people do not use soda as the leavening agent and the fermentation is a strictly controlled process.
