Jianshui Bird Nest shortbread, Honghe

Bird Nest Shortbread is a traditional noted snack in Yunnan . It has a history of over 100 years. It stems from Jianshui. It uses flour, lard and white sugar as raw materials. At first, mix flour with lard and use it as cover. Wrap some fillings and then compress it into an elongated cylinder. Knead it into the form that the top is small and the bottom is large with uniform thickness. Fry it in a frying pan until it becomes crisp. However, it remains white in color. Fish it out of the pan. Place it in a plate with its bottom up. Sprinkle it with white granulated sugar at last.  Bird Nest Shortbread looks like a bird’s nest in shape. There are some snowflakes at the bottom of the white neat. It looks beautiful. It’s fragrant and crisp. It melts the moment it’s put into the mouth. It’s a good food for young and old.
