Zhanjiang people are fond of white cut chicken. Traditionally they serve the whole chicken, including the head and feet, but now they also chop the chicken into pieces after the chicken is poached and plunged into ice water to ensure that the meat is juicy and tender. When eating the dish, they dip the meat into a pre-made sauce.

Three procedures are important in making this dish: the choice of the chicken, cooking, and the making of the dipping sauce.
