Xiang Lotus with Rock Candy, Zhuzhou

 It is a famous desert in Hunan. Since West Han Dynasty when the local people gave white lotus as intribute to Emperor Gaozu, Liu Bang, Xiang Lotus has also been called Intribute Lotus and it is mainly planted in Dongting Lake, and Xiangtan is a famous area for Xiang lotus, where Huashi and zhonglupu produce the most and the quality is the best. Xiang lotus is made up of two kinds—white lotus and red lotus. The white lotus is white and round in appearance, and dense and fragrant in taste, so it is the best all over the county. When the Mawangdui Tomb in Changsha was opened, people found even in West Han Dynasty, the marquis had eaten Xiang lotus. The poet Zhangji in Jin Dynasty tasted new white lotus, then he sang highly of white lotus.

This dish was very popular in Ming and Qing Dynasties, and it was called at that time “Liang Lianxin”. But at then it was made very simple. And it was added rock candy in modern time.
